Method:

Blend all the ingredients except the fruit until you have a smooth paste. Warm the mixture gently in a pan. Yo may like to thin it with a little extra coconut milk.

Serve it warm with the pomegranate seeds or blueberries

Method:

  1. Preheat oven to 170 degrees C.
  2. Steam the aubergine for 15 minutes until it's soft (or microwave it in less time). Put it in a medium-sized mixing bowl and stir in the chocolate and coconut oil. The warm aubergine will melt the chocolate and oil.
  3. Add the chopped dates and salt. Using a hand blender or food processor, blitz the mixture until it's smooth.
  4. By now it should be cool enough to add the eggs and baking powder. Blitz again for another minute or so, then mix in the ground almonds.
  5. Spread the mixture onto a medium-sized baking tray lined with greaseproof paper and bake in the oven for about 20 minutes. It is cooked when a knife comes out clean.
  6. Serve with full fat live organic Greek yoghurt

TIP: Alternatively, to make cupcakes, divide the mixture into a 12-hole cupcake tray lined with paper cases and bake for 15-20 minutes.

Kiwi and Chia Seed Smoothie

Serves 2

Ingredients:

  • 300g pumpkin (or butternut squash), cooked and diced.
  • 50g coconut butter (or 30g coconut oil)
  • 225ml full-fat coconut milk
  • 1 tsp vanilla bean paste (or 1tsp vanilla extract)
  • Pinch of salt
  • 1/2 tsp ground cinnamon
  • Handful of pomegranate seeds or blueberries, to serve

Clever Guts recipes

The lining of your intestine can be damaged by all sorts of things: infections, some medications, or certain proteins. It is composed of a single layer of cells, and if  the tight junctions that hold these cells together open up, you are prone to a condition called "leaky gut". Eating collagen may help. This is found in meat, gristle, skin and bones, and boiling down bones releases the collagen into the broth.

Method:

  1. Peel and grate the fresh ginger and turmeric, if using. 
  2. Gently heat the nut milk in a small pan, then add the cardamom seeds, honey and coconut oil, whisking constantly so the milk heats through and is foamy.
  3. Pour the mixture into a cup and sprinkle over the cinnamon.

Serves 4

Ingredients:

  • 3 tbsp. olive oil
  • 1 white onion, chopped
  • 2 tsp ground turmeric, or 2 cm fresh root, grated
  • 1 tbsp. root ginger, chopped
  • 2 garlic cloves, chopped
  •  500g carrots, cut into 2cm chunks
  • 400ml Gut-soothing Bone broth(or bouillon)
  • Juice of 1 lime

Method:

  1. Place all the ingredients in a large saucepan with just enough water to cover them. Bring the pan to the boil, then lower the heat, put the lid on and let it simmer, ideally for 6-8 hours, but for at least 2-3 hours, topping up the liquid with water as required.
  2. Take the chicken out and place it on a platter to cool. Remove all the meat from the carcass - it can be used for a chicken salad.
  3. This broth will keep in the fridge for 3-4 days or can be frozen for up to 1 month. It can also be sipped as  a warm drink. It is especially good with a squeeze of lemon and a little sea salt.

Chocolate Aubergine brownies

This should certainly help move things along if you are prone to constipation.

Method:

  1. Place a large pan over a medium heat and sweat the onion in the olive oil with a large pinch of salt for 5 minutes.
  2. Add the turmeric, ginger and garlic and cook for 1-2 minutes, then add the carrots and stir in the bone broth or bouillon. Bring it to the boil, then reduce the heat and let in simmer, covered, for about 25 minutes.
  3. With a hand blender, blend the soup until there are no lumps. Add the lime juice and a little more water if needed,
  4. Season with salt and pepper to taste.

Pumpkin Porridge

Serves 2

Ingredients:

  • 1 cm root ginger (or 1/2 tsp ground ginger)
  • 2cm root turmeric (or 1tsp ground turmeric)
  • 300ml almond or coconut milk (from a carton not a tin)
  • Seeds of 2 cardamom pods
  • 1 tsp local honey
  • 2 tsp coconut oil
  • 1 pinch ground cinnamon

Ingredients:

  • 1 kiwi
  • 1/4 avocado
  • 4 tbsp. chia seeds
  • Juice of 1/2 lime
  • 220ml water
